Coffees of this caliber are hard to come by and this coffee is a Natural + Mosto Fermented Geisha from Altieri’s Alessa lot in Panama! This is a fascinating presentation of processing in Panama that showcases an expressive purple fruit profile bursting with blackberries, strawberries, and a red wine finish alongside good florality and delicate qualities found in geisha. We recommend you pair the Altieri ALE and Alessa to taste the differences between the lots. MAME’s recipe focuses on high agitation to mimic an immersion style brew so you’ll find intense presentation of acidity and sweetness alongside a textured mouthfeel.   



For best results, we recommend you rest this coffee for at least 4+ weeks with the coffee peaking towards 6+ weeks off roast.
